Summertime is a great time to turn a favorite drink into a frozen snack. Bring these Mojito Blanco Popsicles out at your next backyard BBQ or pool party as a treat for the adults! Low calorie & Low Carb.
Mojito Blanco Popsicles
You will need popsicle molds, sticks, & a blender to make these.
Prep time: 5 minutes
Freeze time: 3 hours minimum
Ingredients:
- 1/3 cup lime juice
- 2 cups water or unsweetened lime-flavored sparkling water
- 1/3 cup fresh mint leaves, chopped or cut into ribbons
- 1 lemon, peeled and cut into wedges (optional)
- 1 lime, peeled and cut into wedges (optional)
- ½-1 teaspoon liquid Monkfruit *
- 4 tablespoons Tequila (or light rum)
- Popsicle molds
Instructions:
- Pour lime juice, water, mint, lemon/lime wedges (if using), monk fruit, and tequila into a large pitcher or bowl. Muddle all the ingredients together with a wooden spoon.
- Pour into pop molds, insert sticks, and freeze for at least 3 hours or overnight.
- Remove from freezer and let stand at room temperature for 5 minutes before removing pops from the molds.
Note: Monk fruit is 150-200x sweeter than table sugar, add slowly & check the sweetness level to your taste.
Variations:
Basil Mint Citrus: Use ½ Mint & Basil leaves to make a 1/3 cup. Add in the juice of ½ orange. Follow the rest of the recipe, freeze & enjoy.
Coconut Mojito: Use 2 cups of coconut milk instead of water.
Blueberry Mojito: Add 1 cup of blueberries, lime juice, mint, monk fruit, and tequila to a blender. Puree until smooth. Pour into molds freeze & enjoy. (omit lemon/lime wedges for this version)
